Hawaiian Chicken Skewers

It has been a beautiful day in the neighborhood today, which can only mean one thing . . .

WE'RE GRILLING!

It has been a while since I had cooked outside, so I wanted to do something special, and also including this pineapple I compulsively bought this past week. I named it Jerome.
I would like to dedicate this recipe to our father, who taught me how to grill and barbeque properly, and I'm sure would be impressed by the amazing impromptu BBQ sauce I had concocted. Hopefully so impressed he might one day share his rib dry rub recipe with me, so I can make millions off of it.


Serves 2-4 people

Ingredients:
3 boneless/skinless chicken breasts
1 pineapple
(you don't have to name it, but I think it adds flavor)
Skewers
1 cup ketchup
¼ cup soy sauce
¼ honey
1/8 brown sugar
1 tablespoon mustard
2 whole garlic cloves
2 tablespoons lemon juice
Olive oil
Salt and pepper

LETS COOK!

If you are using a charcoal grill: Find someone who isn't doing anything and bribe them with the promise of food to go start the grill.

If you plan on using a gas grill: Follow these instructions before you start prepping.:
Go to Lowes, Home Depot, Wal-Mart, or anyplace that has outdoor stuff
Go to the grill section
Find a cheap charcoal grill (one of those throwaway ones will work)
Buy it, take it home, put it together and start it

It is a nice day outside; you have no excuse to not use charcoal.

Soak your skewers in water for at least 20 minutes, if you don't they will catch on fire and that will not be delicious.
Take your chicken breasts and cut them into 1 ½ inch cubes and set aside
Do the same to your pineapple. (If you don't know how to break down a pineapple see our FAQ page for a picture demonstration)
Time to make some sweet delicious BBQ sauce!

Take the ketchup, soy sauce, honey (we use bamboo honey here because its amazing), lemon juice, garlic, mustard, and brown sugar and put in a sauce pan. Cook the sauce on medium heat until it bubbles, then lower the temperature to low stirring when you remember to.
Skewer your chicken and pineapple chunks alternating between the two evenly.
Lightly coat the skewers in olive oil, salt and pepper. Then Coat in the BBQ sauce. Make sure to save some of the sauce for basting the skewers why they are cooking.
Take the BBQ sauce off the heat and bring everything outside to Grill Land. By now your coals should be white hot and ready to use.

Place your skewers on the grill and baste with the BBQ sauce and close the lid.

After about 2 minutes, rotate them, baste again in the BBQ goodness, and close the lid.

Do this bunch of times, so that each side of the skewers get some amazing char color and smokey flavor.
Coat the skewers again in the BBQ sauce, and then close the lid. This time leave the grill alone for 5 -10 minutes.
To make this wait easier, because by now the fumes should be making you salivate, just pretend the grill doesn't exist.

Finally remove the skewers from the grill and serve, with the side of your choice; we used a bit more pineapple that we had grilled and some white rice.
There is nothing left to do but devour these Hawaiian Chicken Skewers, and perhaps make use of the still hot coals to cook some s-mores.
